What You'll Learn

The five skills that turn cookies into a product line.

A decorated cookie is one of the most photographable, shippable, repeatable things you can make. These are the technique fundamentals that make it possible.
01

Royal icing consistencies

The single most important skill in cookie work. Flood consistency, outline consistency, the in-between for piped details. The water-drop test, the timing rules, and the recipe that gets the right behaviour every time.
02

The flooding technique

The outline-and-flood method that gives a cookie its glassy mirror-smooth surface. Crater prevention, edge control, and the timing window that decides whether you get a clean fill or a streaky one.
03

Wet-on-wet & dry-on-dry

Two different design timelines. Wet-on-wet for marbled and embedded designs that finish in one session. Dry-on-dry for stacked piped detail, the editorial layered look. When to use which, taught with a project for each.
04

Piped detail

Brush embroidery, dot patterns, fine outlines, simple lettering, and the small flourishes that turn a plain shape into a luxury cookie. The same piping techniques from the cake side, scaled down to cookie size.
05

The design library

Five repeatable design themes you can scale into orders: monogrammed wedding-favour cookies, floral painted-cookie sets, geometric modern, holiday classic, and the on-trend “minimal luxury” style. Designs you can sell straight away.

Why Cookie Decorating

The product that scales.

Wedding cakes are remarkable, slow, single-customer work. Cookies are the opposite. They batch. They ship. Corporate clients buy them in fifties and hundreds. Holiday markets sell them by the dozen. Engagement parties order branded sets. The same skill set that goes into a wedding-cake consultation produces a product line that runs alongside your custom work.

The technique base is smaller than you’d think. Royal-icing consistency is the whole game. Once you have the four working consistencies dialled in, every design choice opens up. Flooding, piped detail, wet-on-wet marbling, dry-on-dry layering. All variations on the same underlying skill.
“I’m just a hobby baker, but I’ve learned so much.” · Rachel Dolphin · Academy student
Cookies are also the most photogenic thing you make. They sit flat. They light beautifully. Your social feed and your website portfolio benefit immediately, even if your cake bookings are months out. The marketing case alone justifies the course.

Your Teacher

Hi, I'm Alexandria.

I founded Finespun Cakes in Toronto in 2015 and have spent the last decade designing wedding cakes and teaching sugar flowers to over 1,000 students worldwide.
I trained at Le Cordon Bleu, studied under Ron Ben-Israel in New York, won an American Cake Award, and was named one of Wedluxe’s Top 10 Wedding Cake Designers in Canada.
My courses are taught the way I wish someone had taught me, with every step shown, no gatekeeping, and no rushing through the parts that actually matter.
