The David Austin Rose
What You'll Learn

How to make a giant, fluffy rose without weighing down the cake.

The technique behind every editorial David Austin you’ve seen, lightweight, layered, and dusted with two-tone antique hues.
01

A lightweight centre & base

Build a centre and base structure that won’t tear your fondant or gouge your buttercream, but holds the fluffiest finished flower.

02

Two-hue colour theory

Two warm antique gumpaste colours, one for the centre and one for the outer petals. Streamline the work, save loads of time on dusting.

03

Dense inner petals

The tightly-packed centre cluster that gives the David Austin its signature compact heart. Cut, shape, attach, repeat.

04

Par-dried outer petals

Looser, more open outer petals that you don’t have to wire individually. The technique that gets the in-full-bloom look without a workshop of tools without the stress of wiring or wobbly petals.

05

Layered dust gradients

Mix and layer multiple dusts. Subtle gradients. The kind of finish that makes people lean in to check whether it’s real.
Why The David Austin Rose

The rose that defined a generation of wedding cakes.

Open any wedding cake magazine from the last decade and the David Austin is there. Cascading from a tier. Tucked into a peony arrangement. Standing alone as a sculptural top. It’s the cabbage-petal garden rose that, more than any other flower, defines what couples mean when they say “I want my cake to feel romantic.”
Big, fluffy, garden-rose romance is built differently from a classic rose. The David Austin needs a lightweight base, a tightly-packed centre, and looser par-dried outer petals. This course teaches all three, and shows you how to do it with the simplest tools.
“I really love the garden rose tutorial that I continue to reference when I need a refresher.” · Paulina Gouzy · Academy student
It’s also one of the most photographable sugar flowers there is. Editorial-ready out of the box. The kind of flower that gets your work shared, tagged, and remembered.

What Students Say
“I found Alexandria’s spray rose tutorial on YouTube on a whim. I stopped by the craft store, gathered some bare minimum tools, and somehow turned a lump of store-bought gumpaste into a lifelike flower. I couldn’t believe what I had made, and I was instantly hooked.”
Rachel M · Dreamcakes, Austin

Your Teacher

Hi, I'm Alexandria.

I founded Finespun Cakes in Toronto in 2015 and have spent the last decade designing wedding cakes and teaching sugar flowers to over 1,000 students worldwide.
I trained at Le Cordon Bleu, studied under Ron Ben-Israel in New York, won an American Cake Award, and was named one of Wedluxe’s Top 10 Wedding Cake Designers in Canada.
My courses are taught the way I wish someone had taught me, with every step shown, no gatekeeping, and no rushing through the parts that actually matter.
