From your kitchen to their wedding.

A complete, three-tier wedding cake project, taught end to end. The exact timeline, recipes, sizes, stacking, and delivery technique I use for every wedding cake that leaves my studio. By the end, you’ll have made a real wedding cake, with no surprises on the day.

What You'll Learn

Every skill that takes a cake from kitchen to venue.

Not just decorating, the whole logistics chain. Timeline, scaling, stacking, transport. The unglamorous parts that decide whether the cake arrives intact.

01

Three cake sizes, scaled properly

10 servings, 27 servings, 60 servings. The exact vanilla cake recipe scaled three ways, so your tiers bake evenly regardless of pan size.
02

The professional timeline

What to bake when. How to store cakes and fillings. How far ahead you can prep each step. When to deliver for optimum freshness. The schedule that prevents the night-before panic.

03

Assembly & masking, scaled up

Filling and masking a three-tier cake is different from a single-tier. Sharp edges, smooth sides, dowel placement, internal structure, all taught for the larger format.
04

Stacking that holds

The stacking technique that doesn’t sag, lean, or collapse. Internal dowels, board placement, structural geometry. The difference between a cake that arrives and a cake that doesn’t.
05

Transport & day-of delivery

How to get a three-tier cake into a car without disaster. The disaster bag (what’s in it, how to use it). On-site fixes when something cracks at the venue without losing your mind.
Why DIY Wedding Cake

The course for the moment someone asks.

It usually goes one of two ways. Either your daughter, sister, or best friend looks at you across the kitchen and says “would you make my wedding cake?”, or you’re already taking cake orders on weekends and a couple has just asked you to do their wedding for the first time. Both moments come with the same internal monologue: I can bake a cake, but a wedding cake?
Yes. You can. A three-tier wedding cake is just three cakes you already know how to make, plus the logistics that wrap around them. This course teaches the logistics. The bake-ahead schedule, the cake-board sizing, the dowel placement, the disaster-bag-in-the-trunk that means nothing rattles you on the day.
“The photographer couldn’t believe the sugar paste flowers were not real.” · Janet Pinson · Academy student
This is also a starter project. Three intro flowers are included so you can decorate your cake right out of the gate, plus a coupon for additional flower courses if you want to push it further later. Everything in one $197 box.

Your Teacher

Hi, I'm Alexandria.

I founded Finespun Cakes in Toronto in 2015 and have spent the last decade designing wedding cakes and teaching sugar flowers to over 1,000 students worldwide.
I trained at Le Cordon Bleu, studied under Ron Ben-Israel in New York, won an American Cake Award, and was named one of Wedluxe’s Top 10 Wedding Cake Designers in Canada.
My courses are taught the way I wish someone had taught me, with every step shown, no gatekeeping, and no rushing through the parts that actually matter.
