Paper-thin petals, impossible colour.

The Icelandic poppy is the only flower in the catalog built around a silicone mould, and the only one where the colour does most of the heavy lifting. Coral, peach, deep orange, sherbet pink. The advanced saturation technique that keeps these tones singing without ever going muddy.

What You'll Learn

The five skills behind a flower with no forgiveness.

The Icelandic poppy has only four petals, paper-thin. Every move is visible. The technique isn’t about hiding mistakes, it’s about not making them, and the colour saturation that turns a competent flower into an editorial one.
01

The silicone-mould technique

The only flower in the catalog that uses a silicone mould. How to dust the mould, press the paste, release without tearing, and which mould brands actually work. Studio-tested recommendations included.
02

Paper-thin petal work

Icelandic poppies have petals so thin you can almost see through them. The rolling, the easing, and the moisture-control technique that lets you get paste that thin without it cracking.
03

Saturated colour without mud

The hardest thing in this course. Coral, peach, and deep orange need depth, but every layer of dust risks turning them brown. The four-pass technique that builds saturation in clean steps.
04

The crepe-paper texture

The signature crinkled, almost-tissue surface that makes a poppy look like a poppy. Applied through the mould, then refined by hand after release.
05

The dark centre & stamens

The black-purple centre that anchors every poppy. Built with stamens, fine cotton work, and the touch of pollen dust that catches the light. The contrast that makes the colour pop.
Why The Icelandic Poppy

The flower wedding photographers fight to shoot.

Icelandic poppies have been the most-requested flower in editorial wedding photography for the last three years. The translucent paper-thin petals, the saturated coral and peach tones, the dark dramatic centre. They’re the flower that turns a wedding cake into a magazine cover. And almost no one can make a believable sugar version.
The reason is that an Icelandic poppy has nowhere to hide. Four petals. Paper thin. Saturated colour. Dark centre. Every other flower in the catalog can compensate for a weak petal with a strong build or a strong dusting. This one can’t. Which is why this is an advanced course, priced higher than the others, and why mastering it puts you in a small group of cake artists.
“We love your gumpaste recipe and tutorials. You have certainly inspired us, even though we are just hobby bakers.” · Noel J · hobby baker
The silicone-mould technique is also unique to this flower. Once you have it, you have a technique that translates to a handful of other advanced flowers (clematis, hellebore, certain orchids). The $167 price reflects that it’s two skills in one course.

Your Teacher

Hi, I'm Alexandria.

I founded Finespun Cakes in Toronto in 2015 and have spent the last decade designing wedding cakes and teaching sugar flowers to over 1,000 students worldwide.
I trained at Le Cordon Bleu, studied under Ron Ben-Israel in New York, won an American Cake Award, and was named one of Wedluxe’s Top 10 Wedding Cake Designers in Canada.
My courses are taught the way I wish someone had taught me, with every step shown, no gatekeeping, and no rushing through the parts that actually matter.
