The Sugar Poinsettia

What You'll Learn

Five core skills, taught in plain English.

A complete poinsettia, built up from raw white gum paste, through every colour, shape, and dusting decision that makes it real. Recorded once, yours forever.
01

Colouring gum paste

Deep festive reds and pinks that don’t muddy. Plus the right greens for the leaves, and how to mix them.
02

Rolling & cutting

How thin is thin enough, how to handle coloured paste without it staining everything, and how to cut clean shapes.
03

The centre

That cluster of tiny yellow buds at the heart of every poinsettia, taught from scratch.
04

Bracts & leaves

Shaping the red bracts (the bits people call petals) and the dark green leaves so they sit naturally together.
05

Dusting & taping

The final layer that takes it from “made by hand” to “is that real?” Plus the taping that holds it together.
Why The Poinsettia

The cake that books your December.

Every year, the same thing happens. By November, couples and corporate clients start asking for cakes that feel like Christmas, festive, sculptural, photographic. And every year, the cake artists who can make a real poinsettia book out first.
A good sugar poinsettia is the single most useful flower in your seasonal toolkit. It’s the cover of your December Instagram. It’s the cake that gets shared in someone’s holiday newsletter. It’s the reason a corporate buyer remembers you next year.
“It’s the only flower you really need for the whole holiday season. One course, two months of bookings.”
This is also one of the most forgiving sugar flowers to learn. The bracts aren’t fussy. The shaping is bold, not delicate. If you’ve been intimidated by peony layers or rose curves, the poinsettia is where confidence comes back.

Your Teacher

Hi, I'm Alexandria.

I founded Finespun Cakes in Toronto in 2015 and have spent the last decade designing wedding cakes and teaching sugar flowers to over 1,000 students worldwide.
I trained at Le Cordon Bleu, studied under Ron Ben-Israel in New York, won an American Cake Award, and was named one of Wedluxe’s Top 10 Wedding Cake Designers in Canada.
My courses are taught the way I wish someone had taught me, with every step shown, no gatekeeping, and no rushing through the parts that actually matter.

Why buy one course when you could have all of them?

The Sugar Poinsettia is included in the Finespun Academy at $29/month, along with every other course, over 100 studio recipes, all seven studio tools, and live time with Alexandria every month.
After three months in the Academy, you’ve already gotten more than the price of this single course. Most members stay much longer.
