2. Focus on TECHNIQUE over new tools. You can use just an offset spatula and bench scraper.
3. You really have to whip SMBC until light and fluffy! Don’t get scared by the curdled phase, power through 🙌🏼
4. Start of with a layer that is too thick so you have more time to work and buttercream to scrape off.
